In a New York Times Article, sponges are .."the warm, moist, crevice-filled breeding ground for bacteria." Hence, they are not allowed in commerical kitchens to use for dishwashing. So, why would you want to use a sponge in your home kitchen? You don't.
Inspired by a presentation, I am compelled to spread the word about this vital operation. After a show of frightening statistics about our landfills (toxic!) and disposal systems (inefficient!), I felt rescued when the discussion turned to the zero-waste premise, in which food production becomes a renewable, sustainable and elegant circle.
